The meatloaf revival has a leftovers angle as well, because a cold slice on white bread with mustard is one of the great lunches. Fight me.

Plant-based loaves and lentil versions have joined the party. Do they taste like Grandma’s? No. Are some of them surprisingly good? Yes, and say that as someone who side-eyed them at first.

How to Join the Meatloaf Revival at Home

Keep it simple. Use roughly a pound and a half of beef and pork combined. Soak your breadcrumbs, add an egg, grate in an onion, and season like you mean it. Then stop touching it. Overmixing is how you end up with a hockey puck, and nobody wants to explain that at the dinner table.

Bake at around 350°F until the center hits 160°F, then let it rest ten minutes. Yes, ten. Put the knife down. Glaze it twice, once at the start and once near the end, so it turns sticky instead of soggy.

Pair it with something green if you feel obligated, but let’s be real, the mashed potatoes are carrying this whole plate.

Why the Meatloaf Revival Says More About Us Than the Recipe

Here’s the part that really stands out.me. Nothing about this dish is new. It’s cheap, it’s forgiving, and it feeds people. The meatloaf revival isn’t a trend someone cooked up in a boardroom. It’s folks remembering that a hot dinner on a random Tuesday can feel like a hug from a kitchen you haven’t stood in for years.
